Breakfast Burritos (you can have for lunch too)

For a flavorful, hearty and healthy start (serves 2)

 Ingredients:
1/4 avocado
4 corn tortillas
6 egg whites
2 soy sausage patties
prepared tomato salsa
1 scallion, chopped

Directions:
Peel avocado, dice and set aside. Wrap tortillas in foil and place in a 350-degree oven to heat while preparing the eggs and sausage. In a nonstick skillet or a skillet sprayed with pan spray over medium-low heat, crumble sausage patties and stir just long enough to heat the sausage thoroughly. Remove the sausage to a covered bowl and set aside.

Wipe out the skillet with a paper towel, spray with pan spray and return skillet to the heat. Whisk the egg whites with a fork and pour into the heated pan. Cook and stirring frequently, until eggs are scrambled.

To assemble, place two tortillas on each of two plates. Evenly divide sausage, egg whites and avocado among the tortillas. Top with chopped scallions and salsa, and roll tortilla around filling.

WOW!!!  I have been feeling a bit under the weather since late yesterday and didn't think I was going to be able to do much of anything today, BUT....... I had my Herbalife Pumpkin Spice Shake (with aloe concentrate and tea) this morning and my energy level went through the roof - Yahooooooo.  I have already done my workout with Jillian (her 30 day shread DVD series) and an almost ready to head out the door for  my fast paced walk (been averaging about 3 miles).  Wooooooo Whooooooo, Go Herbalife...

Banana Bread Shake

Ingredients:
2 scoops French Vanilla Formula 1 Nutritional Shake Mix
2 tablespoons Personalized Protein Powder (or more)
1 cup plain soy milk or nonfat milk
1/2 very ripe banana
1/8 teaspoon black-walnut flavoring
A few drops vanilla extract
1 dash cinnamon

Quick Turkey Chili


Quick Turkey Chili 
(So yummy, especially on a cool/crisp day)

1 lb ground turkey
1 cup chopped onions
1 can diced green chilies
1 can diced tomatoes
2 tablespoons olive oil
2 cloves garlic
4 tablespoons chili powder (to your taste)
salt & pepper hot sauce if desired

Brown ground turkey in olive oil until brown, add onions and cook until soft. Add garlic, salt, pepper and chili powder, mix well, add chopped chilies, diced tomatoes and simmer for about an hour on low. Serve with sour cream and grated cheese. Add hot sauce if desired.

Spicy Chicken Cacciatore


Spicy Chicken Cacciatore  (YUMMM-O), A spicy southern-Italian favorite  (serves 2)

Ingredients:
2 chicken breast halves, boneless and skinless
1/2 teaspoon salt
pepper to taste
1/2 red onion, chopped
6 garlic cloves, minced
1 tablespoon capers
2 tablespoons fresh basil or 2 tablespoons dried basil
1/2 teaspoon dried red chili flakes
1 14-ounce can stewed tomatoes
2 red bell peppers, chopped

Directions:
Season chicken with salt and pepper. Spray a large skillet with pan spray and brown chicken over medium heat, 3 minutes on each side.
Transfer chicken to a plate and set aside. Add remaining ingredients to skillet and simmer for 10 minutes. Return chicken and juices to skillet, spoon sauce over chicken. Cover and simmer for an additional 7 minutes or until chicken is tender and cooked through.

Feeling So Great!!!!!!!

A big thank you to Herbalife for their products!  I'm feeling healthy and energized, ready for the day.  Last week I started walking, & day one I went a meesly .93 miles.  Day two 1.17 miles, day three 2.17 miles.  Then we had the weekend & I didn't walk.  I was worried about doing day four (today), but Herbalife energy kicked in & I went 2.25 miles.  Wooooooo Whooooooo.......  GO HERBALIFE <3

Dijon Broccoli Chicken


CHECK OUT THIS GREAT RECIPE:
Ingredients:
6 tbsp or 1 packet dijon mustard
1 tbsp olive oil
1 lb chicken breasts (you can cut chicken into strips also)
1/2 cup chicken broth
1 clove garlic, minced
4 cups flowerets broccoli
1 tbsp soy sauce



Directions:
1. Mix chicken broth and soy sauce. Set aside
2. Cook broccoli and garlic in hot oil over medium-high heat until crisp-tender. Remove from skillet. Cover to keep warm
3. Add chicken to skillet. Cook and stir until cooked through
4. Stir in broth mixture. Bring to a boil. Reduce heat to medium-low. Stir in mustard until well  blended. Return broccoli to skillet.
5. Cook until heated through, stirring occasionally.
6. Enjoy!

Yields 4 servings, Prep time 10 min,Cook time 30 min

Chicken Florentine Casserole

Chicken Florentine Casserole (from Allrecipes.com and it is really yummy)

"Chicken Florentine casserole, which can also be adapted with either fish or shrimp, lies on a bed of spinach leaves and mushrooms, has a creamy white sauce mixed with garlic, Parmesan cheese, and Italian seasonings, and is topped with baked mozzarella."

 

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 1/4 cup butter
  • 3 teaspoons minced garlic
  • 1 tablespoon lemon juice
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 tablespoon Italian seasoning
  • 1/2 cup half-and-half
  • 1/2 cup grated Parmesan cheese
  • 2 (13.5 ounce) cans spinach, drained
  • 4 ounces fresh mushrooms, sliced
  • 2/3 cup bacon bits
  • 2 cups shredded mozzarella cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Place the chicken breast halves on a baking sheet; bake 20 to 30 minutes, until no longer pink and juices run clear. Remove from heat, and set aside.
  2. Increase the oven temperature to 400 degrees F (200 degrees C).
  3. Melt the butter in a medium saucepan over medium heat. Stirring constantly, mix in the garlic, lemon juice, cream of mushroom soup, Italian seasoning, half-and-half, and Parmesan cheese.
  4. Arrange the spinach over the bottom of a 9x9 inch baking dish. Cover the spinach with the mushrooms. Pour half the mixture from the saucepan over the mushrooms. Arrange chicken breasts in the dish, and cover with the remaining sauce mixture. Sprinkle with bacon bits, and top with mozzarella cheese.
  5. Bake 20 to 25 minutes in the 400 degrees F (200 degrees C) oven, until bubbly and lightly browned.
